Let’s be honest; planning and making lunches for each day of the week can be a time-consuming and tiring task. You rotate through the same four or five meals, and want to change it up just in time for spring! Although making lunches for work can seem like a chore, it doesn’t have to be.

Although you may be used to the cold winter weather bringing lots of warm and hearty soups, warm sandwiches, pot roasts and casseroles, it’s time for radiant, colorful meals that are a perfect representation of the vibrant spring season. Try out these easy, fun meals that scream “warm weather.”

Stuffed Zucchini Boats

You’ve probably heard of stuffed peppers, but have you tried stuffed zucchini boats? These easy stuffed zucchinis are the best lunch to take to work to warm up in the microwave. Creamy Roasted Carrot Soup
